Time sync of ESXi host with a NTP is a recommendation, but your VMs can survive without ESXi sync time, since you disable time synchonization setting of VMware Tools and enable another type of time sync on guest, like NTP for Linux and Win32Time for Windows machines.
But again, my recommendation is to enable NTP on host :-)
